Smoked Salmon Frittata

Made this this morning for my husband- came out perfectly and I have never even made a frittata before!

1 small yellow onion, diced

1 tbsp unsalted butter

10 large eggs

1 cup heavy cream

4 oz fresh goat cheese or cream cheese, crumbled

1/4 lb (4oz) smoked salmon, chopped (I buy the sliced kind in the flat package)

3 scallions, chopped, white and light green parts

2 tbsp chopped fresh dill

1 tsp salt

1/2 tsp freshly ground black pepper

Preheat the oven to 350 degrees F. Saute the onion and butter in a 10-inch ovenproof skillet over medium-low heat until translucent, about 7 minutes. In a large bowl, beat the eggs. Add the heavy cream, cheese, smoked salmon, scallions, dill, salt, and pepper and combine. Pour the mixture over the onions and place the skillet in the center of the oven. Bake the frittata for about 50 minutes, until it puffs and a knife inserted in the middle comes out clean. Serve hot directly from the pan.
